Denis Kats
In hospitality, it’s the people behind the scenes who bring the magic to life—and at Circa 1886 Restaurant, that magic often begins at the bar. We’re proud to spotlight Denis Kats, our incredibly talented Bar Manager, whose creativity and care shine through in every cocktail he crafts.
Denis doesn’t just mix drinks—he creates meaningful moments. With a refined understanding of flavor and presentation, he curates experiences that resonate on a personal level. For Denis, the greatest reward is the laughter, stories, and heartfelt conversations shared with guests across the bar.
At Circa 1886 and across all of our inns, we’re fortunate to have passionate individuals who view their work as more than just a job. They are artists, storytellers, and true connectors. Hospitality is, at its heart, about human connection—and we are constantly inspired by our team’s commitment to making every guest feel seen, welcomed, and valued.
Many of our guests return year after year, often forming lasting relationships with our staff. These connections are the heartbeat of everything we do. Whether it’s a warm welcome, a genuine smile, or a story shared at the bar, we believe the smallest moments can leave the biggest impressions. Thank you, Denis and all our staff, for everything you do!

Why the People Make This Job Worthwhile
“For me, it’s all about the people. I get the opportunity to meet new faces every day. While the job can be tough at times, the guests definitely make it worthwhile. I get to build personal relationships with them—they come back, share their stories, and open up about their thoughts, wishes, and dreams. It truly feels like a family here, and that’s the most fulfilling part of my job.”

Why Community Matters in the Bar Scene
“I think the local crowd truly appreciates being able to come to Circa 1886 and enjoy something more personal—a setting that feels a bit more intimate. That’s what they’re looking for. Sure, sometimes you want to be in the middle of all the action, with noise and energy all around you. But other times, you prefer a more laid-back, cozy atmosphere—and that’s exactly the kind of space Circa 1886 creates. And that’s awesome.”

Why the Old-Fashioned is My Favorite Cocktail
“Bourbon and I haven’t always had the best relationship, so this cocktail kind of feels like an olive branch if you will. It’s a classic—sweet and bitter at the same time—and it hits every part of your palate. It really takes bourbon to a different level, especially for people who don’t usually love the flavor of the spirit. It’s such a beautiful introduction to the world of bourbon.”

How I Name My Cocktails: A Creative Process
“When it comes to naming cocktails, I try to tie them to something local—a landmark, a neighborhood, maybe even a specific street. Sometimes, it’s inspired by someone’s story or memories of growing up here. So, if you’ve got a childhood connection to Charleston…your drink might be coming next! Inspiration can hit at the most random time, and keeping things light and fun helps the creative process flow.”

From Server to Bar Manager: My Mixology Journey
“I started on the floor serving tables, and that eventually led to an opportunity a couple of years ago. The bar manager departed, and they offered me the position. For me, it was a beautiful new challenge, and I embraced it wholeheartedly.
Now, in addition to managing the bar, I offer an intimate cocktail class experience designed to be personal and unique. When you book, it’s just us, or a small group, and together, we craft a few cocktails, enjoy some food, and chat about life and what brings people to Charleston. It’s a laid-back, genuine experience that I believe makes it special for everyone. The class allows guests to sit down, relax, and enjoy something cold and tasty after a long day of exploring the city. That’s the vibe I aim to create in the class—unplug, enjoy, and savor every moment.”

Cocktail Tips: Just You and the Drink
“My biggest tip? Just remember—it’s just you and the cocktail. If you don’t like it, you can always toss it and try again. Keep experimenting and have fun with it. If you find something you love, follow that path and keep exploring. And, don’t be afraid to step out of your comfort zone! You might discover a flavor you didn’t like before suddenly hits differently. Tastes evolve—you never know when inspiration will strike.”
